Grilled Cheese
My personal favorite grilled cheese - the colby-jack and muenster melt to create that perfectly gooey center. The grain mustard, basil, and rosemary add a flair of flavor. Simple. Fast. Delicious. Easy to make multiple if eating with family and friends. Everyone can adjust and substitute ingredients to his/her/their own taste (sorry for the multiple "to taste" in this recipe, but it really is a choose your own adventure). If you really want to take your grilled cheese/panini game to the next level, I strongly suggest a cast iron griddle vs a fry pan. Recipe is written for 1 sandwich.

Ingredients
- 2 slices bread of choice
- 1 slice colby-jack cheese can substitute for cheese of choice
- 1 slice muenster cheese can substitute for cheese of choice
- whole grain mustard to taste
- fresh basil to taste
- mayo to taste and extra for grilling
- salt to taste
- pepper to taste
- dried rosemary to taste
- 1/2 Tbsp butter for grilling
Instructions
- Add mayo and mustard to taste on one slice of bread (inside of sandwich).
- Add basil to taste. I like to cover the entire slice.
- Layer both colby jack and muenster cheese on top of basil.
- Add second slice of bread. Spread a light layer of mayo on the topmost outside layer of the bread. Add salt, pepper, and dried rosemary, to taste, to the topmost outside layer as well. That mayo is going to give you the perfect golden browning.
- Add butter to skillet and bring to medium/low heat.
- Once butter has melted, place the sandwich with the outside mayo/seasoning layer face down on the griddle.
- As it cooks, add a light layer of mayo to the outside of the now topmost layer of bread. Once the bottom is a golden brown, use your spatula to flip. Pending your stovetop levels this can happen fast, 2-3 minutes!
- Set stovetop heat to low and let final side cook until golden brown, 1-2 minutes.
- Remove from stovetop. Serve immediately.
